First cultivated in China, today there are countless varieties of peaches grown in temperate climates throughout the world. They fall into season from late spring through early fall. The fruit should be handled delicately as its pinkish-golden skin and yellow flesh tend to bruise easily. Clingstone peaches (pits firmly attached to flesh) tend to be used more often for commercial purposes whereas freestone peaches (pits detach easily) are the fruits commonly purchased at market.
