Larissa Raphael, pastry chef, Telepan, New York City

Larissa Raphael first worked with Telepan owner/executive chef Bill Telepan at JUdson Grill in New York City. Prior to JUdson, she was the pastry chef for two and a half years at AZ. She opened Pace for Jimmy Bradley and Danny Abrams, and then worked briefly at the Harrison before rejoining Bill Telepan at his eponymous restaurant on the Upper West Side. Larissa’s passion for seasonal produce and flavors shines through in her desserts, which are both comforting and quietly elegant in their inception. My hometown is… Bucks County, Pennsylvania, but I’ve been living in New York City for the past eight years.

I get inspired by… eating.

My favorite dessert I’ve had on my menu for summer is… white peach granita or the tres leches. I honestly love them both!

My favorite nonfood indulgence is… friends and family—although, food is usually involved.

When I was a kid, I wanted to be… a dolphin trainer.
The soundtrack of my life would include… Duran Duran, Social Distortion, Bell Biv DeVoe

If I could get away from the kitchen for a month, I’d spend the time… at the Jersey Shore.

I like desserts because… desserts make people happy. They’re fun and delicious!
