Pastry Techniques

 

This is a 20-session course for the serious amateur who wants a taste of the professional pastry kitchen. Classes meet on nights and weekends. They'll be the sweetest 100 hours you've ever spent.

You'll learn to handle chocolate, control a pastry bag, master cakes and pastry dough, and conquer those impressive French desserts. You are placed in a completely furnished workstation, using only restaurant-quality ingredients.
