CHEF JACQUES TORRES,
DEAN OF PASTY ARTS AT THE FCI
|
The FCI's pastry program is the only one in the world designed
by Jacques Torres, one of the most honored pastry chefs in the
world and the youngest to receive the Meilleur Ouvrier de France
Pâtissier Award. Torres is widely known for his TV Food Network
and PBS series, as well as his cookbooks and his tenure at Le Cirque
2000. As The FCI's Dean of Pastry Arts, he has channelled his passion,
enthusiasm, and deep understanding of pastry into a curriculum
and style of training that is unmatched.
Torres' vision is complemented by an equally distinguished
pastry faculty dedicated to bringing out the best in each student.
Master Pastry Instructor Ron Ben-Israel—dubbed "The Wedding
Cake Master" by Zagat and named Best Baker in 2004 by Vogue
Magazine—has received awards from the New York Guild
of Chefs, The Societe de Saint Michelle, and the Societe Culinaire
Philantropic. Ron and his creations have been featured in the national
and international media, as well as in a variety of wedding books.

pastry chef-instructors, and benefit from a guest faculty of pastry
luminaries that includes Florian Bellager of
Fauchon, Ewald
Notter of The International School of Confectionary Arts, and Biagio
Settepani of the renowned Bruno Bakery.
