THE DISH
James Rosselle, cake designer,
Elle Cakes, Los Angeles
Proving his passion by winning all three of the Food Network's "Cake Challenge" competitions in which he has participated, this nutrition student turned baker is making a name for himself with his creations.
My hometown is... Whittier, California.
I get inspired by... anything that is colorful or has an interesting texture/design and other leaders in the industry. Most of my inspiration is gathered from nature. I enjoy the process of making sugar flowers, and when you enjoy doing what you do, it doesn't feel like work!
My favorite cake on my menu right now is... Lemon Meringue. The cakes is composed of vanilla cake, lemon mousseline, and lemon curd. It sounds simple, but it is so delicious. I love tart, tangy, and fresh flavors—especially lemon!
My favorite non-food indulgence is... pottery. I enjoy working with my hands. The idea of molding and forming something from nothing is so fascinating. Your imagination is the limit!!!
When I was a kid, I wanted to be... a swimmer. I've always loved the water. Growing up I spent a lot of time in the pool—swimming lessons and swim teams. But it wasn't long before I found my new passion...pastry.
The soundtrack of my life would include... anything that you can "bob" your head to. I like so many genres of music, it's impossible to pick one.
If I could get away from the kitchen for a month, I'd spend the time... exploring the world's best beaches. I love the ocean. Growing up in Los Angeles, I spent a lot of time at the beach. I love the feel of the sand between your toes and the water at your feet. It is also a relaxing place to be.
I like designing cakes because... I get to make edible art. I can create things out of cake and sugar that are lifelike, beautiful, and artistic. The industry constantly changes with the trends and seasons, and that keeps things interesting.
