    THE DISH

    Elizabeth Falkner, chef/owner,
    Citizen Cake and Orson, San Francisco
    Chef Falkner defies the definition of dessert with her one-of-a-kind, creative, forward-thinking creations, which have helped define Hayes Valley, California, as a fine-dining destination. Before venturing off on her own, Chef Falkner worked alongside some of the best chefs in the Bay Area. She now spearheads two businesses, incorporating the triple threat of bar, restaurant, and most importantly patisserie. This blonde, spiky haired chef is on fire, and we are so glad she was able to find the time to answer our questions.

    My hometown is... San Francisco. 

    I get inspired by... music lyrics, gestures, language and other people.

    My favorite dessert on my menu right now is... I am working on a new version of German Chocolate Dacquoise with black walnuts.

    My favorite non-food indulgence is... kickboxing.

    When I was a kid, I wanted to be... an abstract artist/filmmaker or an architect.

    The soundtrack of my life would include… The Cure, Jason Falkner, Lisa Marie Presley, Cocteau Twins, Hole, Eurythmics.

    If could get away from the kitchen for a month, I'd spend the time... writing another cookbook, reading, experimenting, and exercising.

    I like desserts because... I like making cakes and other foods that are palate pleasing, but with new textures or with new combinations or techniques in surprising presentations.
